Kew Green Ultimate Burger Challenge Final

Fairfax Meadow were very proud to have the opportunity to be involved in Kew Green Hotels search for their next Ultimate Burger. The brief was simple – create a burger focusing on flavour and presentation. The winner was to have their creation produced by our team at Fairfax Meadow and replicated across all the Kew Green hotel brands with the prizewinning story on the menus.

After numerous regional heats, the chefs were whittled down from 55 to 7, where they pitted their burgers against each other at the final cook off – hosted by the elegant Grand Hotel in Brighton. The chefs were given their chosen mince recipe and they hand-pressed the burgers. All ingredients were prepped and chopped, some choosing to mix their ingredients in with the mince.

The finalists had 2 hours to prepare 3 examples of their burger before presenting their dish to the judging panel – including celebrity chef Brian Turner and our very own highly experienced burger taster’s  Rob & Andy – Where it was scored for both taste and presentability. Before cooking began, Brian sent the chef’s on their way with an inspiring speech. He said “The burger is a great dish. It has been much maligned in recent times with the use of cheaper cuts and people not caring about their burger and more importantly, not tasting it. We look for you guys to be proud of what you have done and for us to taste the dish. Well Done. “

The winning burger included a mix of cuts of beef including sirloin, brisket and blade. It included coriander, smoked streaky bacon and mature cheddar. The burger was provided by Peter from Holiday Inn Rugby.

The runner up was from Connor at Holiday Inn Ashford with his Indian spiced burger

3rd place went to Kenny from Holiday Inn Milton Keynes East with his burger including French mustard, onion rings, smoked back bacon and a double sliced bun.

Burger 3Congratulations to all the finalists who made it this far – the array of burgers on show was incredible. Other notable burgers included a beef burger minced with pork fat and pancetta, a Cajun spiced cracked black pepper burger, a dill, pickle and chive burger & a memorable chorizo & stilton burger.
